Vermicelli kheer is a popular Indian sweet dish served for special occasions like weddings, birthdays and other festivities. Vermicelli kheer dessert is popular in international cuisines too. The dish is prepared using vermicelli, milk, ghee, sugar and powdered cardamom. Vermicelli kheer can be served warm or chilled and is a favorite with kids as well as elders. The kheer is garnished with ghee fried raisins and cashew nuts. The watery content in kheer can be adjusted as per individual preferences.

I am going to illustrate the preparatory steps of ‘Vermicelli Kheer’, a tasty and mouth watering recipe, in a simplified version: To make 4 grand servings, you will need: Vermicelli/Semiya – 1 cup Milk – 1 litre Sugar – 3/4 cup Salt – A pinch Cashew nuts(split) – 10 nos Raisins(Kismis) – A few Cardamom(Elakka) pods – 5 nos (crushed) Ghee for frying Preparation method of vermicelli kheer recipe: 1)For preparing vermicelli kheer, take a pan, heat and add little ghee. Roast the broken vermicelli to a golden color and remove from pan. Add little ghee and roast the cashew nuts and raisins to a golden brown color. Keep the roasted raisins and cashew nuts aside. 2)In another pan, boil the milk. 3)Stir in the roasted vermicelli and cook in low heat for about 7-10 minutes. 4)Add sugar, crushed cardamom and required salt. Bring the contents to a boil. 5)Finally, sprinkle vermicelli kheer with fried cashew nuts and raisins. Vermicelli kheer, a favorite with kids as well as elders is ready. Serve the kheer hot or cool in a refrigerator. Note: Since vermicelli kheer tends to thicken on cooling, take care while adjusting the water consistency.
